This "thingy" is a double whammy! It all starts with my love of Costco. It is one of my favorite places to go. I love the samples they give you, the very berry smoothies at the food court, and the excitement of my kids when we go there. They know they will get to sit and eat a pizza or hotdog with their very own drink (so cheap). Anyway, one of my favorites is the Rotisserie Chicken you find in the back. It is so yummy. It costs $4.99 and it gives you a lot of chicken. I take it home, put it in the fridge for 1/2 hour (it will shred easier) and then shred it. I it in all of my casseroles that require shredded chicken. I like it so much because I get to choose what pieces are good and what pieces are thrown away. I am really picky with ligaments (ewww) so this is perfect for me. The next item goes hand and hand with the chicken....
These tortillas are so good. They come in two packs (22 to a pack) so I'll put one in the fridge and one in the freezer. All you do is heat up a pan, throw on the tortilla, turn it over to cook the other side and they're done. So easy. We always have these with the shredded chicken rolled up with cheese and salsa and then we dip it in ranch. Tim's absolute favorite is to cook a tortilla and fill it with smoked turkey, swiss cheese, and salsa-then dip it in ranch. Timmy likey!

Thingy of the week
Here is one of the recipes I cook often with these 2 items.
Green Salsa Chicken Wraps
12 ounce bottle green salsa
2 cups of the shredded chicken (or more depending what you like)
15 ounce can Cannellini beans (or any white bean)
1 can chicken broth
1/2 tsp ground cumin
2 cloves garlic - minced
Combine all ingredients and simmer together on stovetop for 30 minutes.
We serve it rolled in the cooked tortillas, then smothered with cheese (put in microwave to melt) and some sour cream.
Happy eating!

We have to agree with you! Costco is the bomb! I got the Rotisserie Chicken a couple weeks ago and did the same thing! You get tons of meat! It was nice to make different meal that week with the chicken! I love it! Good thingy of the week!
Costco is awesome. I enjoy those tortillas quite a bit. That Rotisserie Chicken sounds like it is a great idea & very easy! I am not really sure why I can't handle it. Something about the smell of it and the taste of propane?
I think Ty likes that chicken too.
Those 2 items are staples at our house too! I LOVE the tortilla's..I cut them up in strips, cook them in a little olive oil & parm cheese and garnish over Taco Soup...soooo yummy! We also like to cook them up with cinnamon & sugar...kind of tastes like a churro! Ok...now I'm hungry:)
Sounds delicious--when are you going to make them for Dad and Me?
I will have to try this recipe. I have never tried uncooked tortillas, but Miriam thinks they are fabulous.
